Zesty Grilled Kabobs


  • 2 bell peppers (green, red, or yellow), cut into 1” chunks
  • 1 lb. mushrooms, whole
  • 1to 2 large onions, cut into 1” chunks
  • 1 lb. cherry or grape tomatoes, whole
  • 1 lb. small, new red potatoes, whole
  • 2 medium zucchini, cut into 1/4” slices
  • 2 medium summer squash, cut into 1/4” slices
  • 3 to 4 Tbls. Zesty Bread Dipping Mix*
  • 1/4 to 1/2 cup extra virgin olive oil
  • 15+ skewers (if using wooden skewers, make sure to soak in water for at least 1 hour first)
*You may also add cubed chicken, pork or steak to this recipe.


In a large bowl, combine Zesty Bread Dipping Mix with 1/4 cup olive oil - you may need more later as the vegetables absorb the oil. Add the vegetables and toss (easiest with one group at a time). Once each vegetable is coated with the oil mixture, skewer it and place on preheated grill, starting with the vegetables that will take longest to cook (i.e., potatoes). Cook until the vegetables are tender; cooking times will vary. Serve warm with rice or couscous. Serves 5 to 6.

* You may substitute another Country Home Creations bread dipping mix.
