- 1 Tbsp Cajun Dip Mix, unprepared
- 3 lbs. chicken (boneless, skinless works best)
- 2 cups V-8® juice (vegetable/tomato juice)
- 1 tsp. salt, optional
Place chicken into a 4 qt. slow cooker. Sprinkle salt and Cajun Dip Mix (dry) over chicken. Pour V-8® over chicken. Place lid on slow cooker and cook on high for 4 hours, then low for 3 hours. Cook until chicken shreds easily. Shred in slow cooker, using 2 forks. Serve with white rice or noodles and a cooked vegetable.
Variation: you can add 1/2 cup each of any or all of: chopped onions, celery, green pepper, and sliced mushrooms during the last 3 hours of cooking time.
