Bacon Cheeseburger Mashed Potato Casserole 

  • 1 packet Bacon Cheeseburger Dip Mix
  • 8 cups prepared instant mashed potatoes (or 8 cups real mashed potatoes)
  • 2 Tablespoons butter, softened
  • 1 cup sour cream (8 oz.)
  • 2 cups shredded cheddar cheese, reserve 1/2 cup of cheese for garnish

Preheat oven to 350 degrees. Grease bottom of 9x9-inch glass casserole dish. Make enough instant mashed potatoes for 8 cups serving according to the directions on the box. You may also use 8 cups REAL mashed potatoes. Add remaining ingredients (remember to set aside 1/2 cup of shredded cheese) and mix well. Spread potato mixture into greased casserole dish. Sprinkle 1/2 cup cheese over top and bake until browned and bubbly, approximately 20 minutes. Allow to set 5 minutes before serving.
