Cucumber Onion Chickpea Salad


  • 1 cup Cucumber Onion Dip Mix, prepared 
  • 2 (15.5 oz.) cans chickpeas, drained & rinsed
  • 2-3 stalks (1 cup) celery, finely chopped 
  • 1 cup red onion, finely chopped 
  • 1 tbsp. lemon juice 
  • Optional: fresh parsley or dill


 Mash chickpeas in a large bowl with a fork, leaving some larger pieces for texture. Mix in prepared Cucumber Onion Dip Mix, celery, onion, lemon juice, optional herbs and salt and pepper to taste. Serve in lettuce cups, in a wrap, or with crackers.
