Ingredients:
- 1 cup Cucumber Onion Dip Mix, prepared
- 2 (15.5 oz.) cans chickpeas, drained & rinsed
- 2-3 stalks (1 cup) celery, finely chopped
- 1 cup red onion, finely chopped
- 1 tbsp. lemon juice
- Optional: fresh parsley or dill
Directions:
Mash chickpeas in a large bowl with a fork, leaving some larger pieces for texture. Mix in prepared Cucumber Onion Dip Mix, celery, onion, lemon juice, optional herbs and salt and pepper to taste. Serve in lettuce cups, in a wrap, or with crackers.
