- 3 Tbsp. Parmesan Pesto Dip Mix unprepared
- 1/4 cup olive oil
- 2 cups cherry tomatoes, cut in half
- 1-1/2 cups fresh mozzarella balls, cut in half*
- 2 Tbsp. balsamic vinegar
- 3 Tbsp. fresh cut basil
- salt & pepper to taste
In a large bowl combine cherry tomatoes and mozzarella cheese. In a small bowl mix together Parmesan Pesto Dip Mix and olive oil. Pour Pesto mixture over tomatoes and toss to coat. Sprinkle salt and pepper to taste and top with fresh basil. Drizzle with balsamic vinegar and serve immediately.
*You may use a large ball of mozzarella, cut into 1/2 inch diced pieces.
