Pumpkin Bread Pudding



  • 8oz. cream cheese
  • 4 Tbsp. salted butter, softened 
  • 1/2 cup powdered sugar
  • 1/2 tsp. vanilla extract
  • 3 to 4 Tbsps. milk


Prepare Pumpkin Bread Mix per package instructions. Once bread is cooled, cut into cubes and spread out on a cookie sheet, allowing the bread to dry slightly for approximately 1-2 hours. Mix the eggs and half & half. Place bread cubes equally into greased ramekins for individual portions or an 8x8-inch baking dish. Pour egg mixture over the bread cubes and chill overnight. Remove from the refrigerator and bake uncovered at 350° for 30 minutes. Make the glaze while the bread pudding is baking. Remove from the oven and allow to cool slightly. Pour glaze over the top and serve.

Glaze Directions: 

In a medium sized bowl beat softened cream cheese and butter with a hand mixer until fluffy. Add vanilla, powdered sugar and whip on high until mixture is smooth. Add milk to reach desired consistency.
