Salmon Pesto Pasta Salad


  • 3 Tbsp. Parmesan Pesto Dip Mix, dry
  • 1/4 cup grated parmesan cheese
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 lb. Gemelli pasta 
  • 1 filet of salmon, cooked 
  • 1 cup peas, drained
  • 2 -2.5oz cans of sliced black olives, drained
  • 1 -14.5oz canned diced tomatoes, drained
  • 1/4 cup extra virgin olive oil


Prepare Parmesan Pesto Dip Mix per package directions and chill for a minimum of 4 hours. Cook Gemelli pasta per package directions. In a large bowl combine all ingredients thoroughly. Serve immediately or chill in the refrigerator 1-2 hours before serving.
