1 cup of mayonnaise
½ cup parmesan cheese, grated
½ to 1 teaspoon salt
1/2 teaspoon black pepper, ground
2 to 3 pounds chicken breast, boneless – skinless, preferred. Bone in with skin works well too!
Preheat oven to 375 degrees. Rinse chicken breasts, pat dry. Line a baking pan with foil. Mix together all ingredients in a medium size bowl. Spread mixture on top of chicken breasts, cover pan with foil and bake for 25 minutes covered. Remove foil and continue baking for remaining 20 minutes, or until chicken is thoroughly cooked and browned on top. This works on boneless pork chops also!
