Spinach Lasagna Roll Ups

Ingredients:

  • 1/4 cup Spinach Dip Mix*(dry mix, measured)
  • 1-1/4 cups Ricotta cheese
  • 2 cups small curd cottage cheese
  • 2 cups shredded Monterey Jack cheese -or- Mozzarella cheese, divided 
  • 1 cup shredded Parmesan cheese, divided
  • salt & pepper
  • 8 lasagna noodles 
  • 1 jar (24 oz.) marinara sauce 
  • Optional: fresh basil, chopped  

*Mix up spices (in small bowl or plastic bag) before measuring to ensure even
distribution of ingredients.

Directions: 

Cook lasagna noodles al dente and drain. Preheat oven to 350°. In a large bowl combine ricotta cheese, cottage cheese, 1 cup Monterey Jack or Mozzarella cheese, 1/2 cup Parmesan cheese, 1/4 cup Spinach Dip Mix and salt & pepper. In a greased 13x9-inch baking dish or 12 inch skillet spread 1-1/2 cups marinara on the bottom of the dish.  Using a spoon spread the spinach mixture evenly onto each lasagna noodle. Gently roll each noodle lengthwise and place seam side down into baking dish. Drizzle roll ups with remaining marinara sauce and top with remaining cheese. Carefully cover dish with foil so cheese does not stick to foil while baking. Bake for 30 minutes. Remove foil and broil for 1-2 minutes until top is golden brown. Garnish with optional basil.
