Lime Cilantro Street Corn


  • Lime Cilantro Dip Mix
  • 1-1/2 cups sour cream
  • 1/2 cup mayonnaise 
  • 4-5 ears of corn 
  • 1/2 cup Cacique® Cotija cheese, crumbled *
  • salt to taste 
  • 1/2 tsp. chili powder
  • optional garnish: fresh cilantro, chopped  

*You may substitute with feta cheese crumbles or parmesan cheese 


Prepare Lime Cilantro Dip Mix according to package directions and refrigerate for a minimum of 4 hours. Heat grill to about 400°. Remove husks from corn leaving the shank on the end. Lightly spray each cob with cooking spray. Grill corn for about 12 minutes turning them every 3 minutes to cook all sides until done. Mix cheese crumbles with prepared Lime Cilantro Dip Mix. Top each piece of corn with the Lime Cilantro mixture and sprinkle with chili powder, optional fresh cilantro and cheese crumbles. Serve immediately.
