
Street Corn Pasta Salad

Ingredients:
- 1 packet Street Corn Dip Mix*
- 1 lb. (16 oz.) ditalini pasta
- 1/2 cup fresh cilantro, finely chopped
- 1 can (15 oz.) whole kernel corn, drained
- 1/2 cup cotija, crumbled -or- queso fresco, crumbled -or- Parmesan cheese, grated
- 3 Tbsp. lime juice
- Optional: 1 can (15 oz.) black beans, drained & rinsed
Directions:
Prepare Street Corn Dip Mix* according to package directions and set aside. Cook pasta al dente. Drain & cool. Mix cooked pasta, prepared street corn mix and remaining ingredients together. Chill for 1-4 hours before serving.
