Street Corn Pasta Salad

Ingredients: 

  • 1 packet Street Corn Dip Mix*
  • 1 lb. (16 oz.) ditalini pasta
  • 1/2 cup fresh cilantro, finely chopped 
  • 1 can (15 oz.) whole kernel corn, drained 
  • 1/2 cup cotija, crumbled -or- queso fresco, crumbled -or- Parmesan cheese, grated
  • 3 Tbsp. lime juice 
  • Optional: 1 can (15 oz.) black beans, drained & rinsed 

Directions: 

Prepare Street Corn Dip Mix* according to package directions and set aside. Cook pasta al dente. Drain & cool. Mix cooked pasta, prepared street corn mix and remaining ingredients together. Chill for 1-4 hours before serving.
