
Party Sized Texas Caviar Pasta Salad

Ingredients:
- 1/4 cup Texas Caviar Mix (dry mix, measured)
- 2 lbs. (16 oz.) Rotini pasta
- 1/3 cup apple cider vinegar
- 1/2 cup vegetable oil
- 1/3 cup water
- 1 can (10 oz.) mild diced tomatoes w/green chiles (i.e., Rotel®), undrained
- 1 can (15 oz.) black beans rinsed & drained
- 1 can (15 oz.) black eyed peas*, rinsed & drained
- 1 can (15 oz.) whole kernel corn, drained
- 1 green bell pepper, chopped
- 1 small red onion, chopped
- 1 cup pepperoni, chopped
- optional: 1 jalapeño pepper, seeded & chopped
*may substitute with red kidney and/or pinto beans
Directions:
In a small bowl mix together 1/4 cup Texas Caviar Mix, apple cider vinegar, vegetable oil, and water set aside. Cook pasta al dente and drain. Rinse pasta with cold water and drain again. In a large bowl combine cooked pasta, mild diced tomatoes w/ green chiles, black beans, black eyed peas, corn, green bell pepper, onion, pepperoni and optional jalapeno. Pour Texas Caviar mixture over top and toss until well coated. Refrigerate for a minimum of 4 hours before serving.
