Ingredients:
- Truffle Parmesan Garlic Dip Mix, dry
- 2 cups small curd cottage cheese
- 1 -10 oz. pkg frozen spinach, thawed, drained, and chopped
- 2 eggs, beaten
- toasted bread crumbs (optional)
- chopped parsley (optional)
Directions:
Preheat oven to 350°. Spray an 8x8-inch baking dish with cooking spray. In a large bowl, stir together Truffle Parmesan Garlic Dip Mix, cottage cheese, spinach, and eggs. Pour mixture into prepared dish. Bake for 30 minutes or until bubbling at the edges and eggs are set. Garnish with bread crumbs and parsley. Serve while warm with pita chips.
